Cranberry Brie Baked Bread

Melted brie drizzled with butter and brown sugar then topped with sweet dried cranberries? Sign. Me. Up. This cranberry brie baked bread will be the hit of the holidays. I made it on Thanksgiving and it disappeared in minutes! I have a feeling I’ll be making it again soon. If you want to be on the “nice list” this year, make this cranberry Brie baked bread immediately!

Ingredients:

  • 1 round loaf of bread (I used Italian but sourdough is also delicious)
  • 6 Tbsp salted butter
  • 1/2 cup brown sugar
  • 1 – 16 oz wheel of Brie, cut into cubes
  • 1/2 -3/4 cup dried cranberries

Directions:

Preheat oven to 350 F

Slice the bread vertically and horizontally to create 1 inch cubes, don’t slice all the way through, you want the bottom of the loaf to be intact.

In a small sauce pan, melt the butter, add the brown sugar and cook for 2-3 minutes over medium-low heat, stirring frequently until combined.

Place the loaf of bread on a baking sheet lined with parchment paper.

Spoon 1/2 of the brown sugar butter mixture over the bread being sure to get in between the cut cubes.

Stuff the cubes of Brie and the cranberries throughout the bread until all the cuts are full.

Spoon the remaining brown sugar butter mixture over top and bake for 15 minutes or until the Brie is melted and the bread is golden.

Enjoy warm from the oven with a holiday cocktail!

Fresh thyme or rosemary

Chopped pecans, walnuts or almonds

Orange zest

Cinnamon
