Chewy Molasses Cookies

The holiday season is about a lot of things, but the most important thing of all is…cookies! Okay, maybe it’s family, but cookies are a close second, right?These chewy molasses cookies have just the right amount of spice and they stay chewy for days thanks to the molasses.
Ingredients:
- 2 cups all purpose flour
- 2 tsp baking soda
- 1 1/2 tsp cinnamon
- 1 tsp ginger
- 3/4 tsp cardamom
- A pinch of cloves
- 1/2 tsp kosher salt
- 1 stick unsalted butter, melted
- 1/3 cup dark molasses
- 3/4 cup brown sugar
- 1/4 cup white sugar
- 2 tsps vanilla
- 1 egg
- Coarse sugar for rolling
Directions:
Preheat oven to 375F
In a medium bowl, whisk together the flour, baking soda, cinnamon, ginger, cardamom, cloves and salt together until combined.
In a large bowl, stir together the melted butter, molasses, sugars, vanilla and egg until combined.
Add the dry ingredients to the wet and stir until combined.
Scoop and roll dough into tablespoon sized balls and roll in coarse sugar until coated.
Place 12 cookies on parchment lined baking sheets and bake for 8-10 minutes rotating the pan half way through.
DO NOT overtake these cookies, I find that they are usually done at 9 minutes but every oven is different. Cool on a rack and enjoy!
Cookies will be crisp on the outside, chewy on the inside.
Store in an airtight container for up to 5 days…if they last that long.

These cookies are The Bomb!! They will definitely not last 5 days!
Maybe two days…tops!
