Basic Vinaigrette

Don’t be intimidated by homemade salad dressing, it’s so easy and is much healthier than store-bought dressing which usually has a ton of sugar and salt in it. I love this basic vinaigrette because it’s perfect as is but can also be altered by adding different flavors to it. I make this every week to keep in the refrigerator for salads, roasted veggies or marinade for meat. Ingredients:

  • 1 tbsp Dijon Mustard
  • 3 tbsp champagne vinegar
  • pinch of kosher salt
  • pinch of fresh pepper
  • 1/2 cup olive oil

Directions:

Place all ingredients in a jar (I like these ones) and shake until emulsified…yep, that’s it! I told you it was easy!

Now that you’ve mastered this basic vinaigrette, let’s talk about some variations. Right before you’re going to use your vinaigrette, you can add one or two of the following:

  • Garlic clove, minced
  • Small shallot, minced
  • 1 tbsp honey or maple syrup
  • 1/2 tsp of your favorite dried herbs
  • 1 tsp of your favorite fresh herbs, chopped
  • 1-2 tsp jam (I like blueberry or fig but any flavor will work)

Here are a few combinations to try:

Shallot and fresh or dried oregano for a Greek Salad.

Honey and fresh mint on grilled peaches

Garlic and fresh dill on roasted veggies

Blueberry jam on a mixed green and berry salad
