Chia Seed Pudding

Chai seeds have a ton of health benefits, they are high in fiber, loaded with antioxidants and protein and high in omega-3 fatty acids to name a few. I try and use them in as many dishes as I can. This chia seed pudding is my favorite way to enjoy them. It’s lightly sweetened with maple syrup and cinnamon and is perfect for an afternoon snack or healthy dessert.

Ingredients:

  • 1/4 cup chia seeds
  • 1- 1 1/2 cups almond milk, depending on how thick you want it
  • 1-2 tbsp maple syrup, depending on how sweet you want it.
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • Pinch of salt

Directions:

Whisk everything together in a glass bowl, cover and refrigerate for an hour, stir, cover and let sit at least 3 hours but overnight is better. If it’s too thick, add a bit more almond milk. Enjoy topped with fruit, shredded coconut, granola, nuts or dark chocolate.
