Crispy Chickpeas

Crispy chickpeas are a simple snack you can make right at home. These little guys are perfect for topping soups and salads, or to munch on with a cocktail or even to add some excitement to your next cheese board. I made these with salt and pepper but you can season them with anything you want! Chili powder, turmeric, lemon zest or even cinnamon and maple syrup for a sweet treat.
Ingredients:
- 1 can chickpeas, drained and rinsed
- Olive oil
- Kosher salt
- Pepper
There are a couple of cooking options for these:
Oven method:
Preheat oven to 375F
Dry the chickpeas off with a paper towel or clean dish cloth.
Place them on a sheet pan, drizzle with 2 tbsp olive oil and season with salt and pepper to taste.
Roast in the oven for 25-35 minutes, (or until golden and crispy) shaking the pan every 10 minutes until golden and crispy.
Season with flavor of choice while still warm.
Stovetop method:
Dry the chickpeas same as above.
In a large skillet, heat 4 tsp olive oil over medium high heat, add chickpeas, season with salt and pepper and toss until coated in oil.
Cook about 10 minutes, stirring occasionally until golden and crispy. They will pop a bit so be careful.
With a slotted spoon, put chickpeas in a bowl and add seasoning of choice.
Some flavor options:
Lemon zest, sea salt, dried oregano
Turmeric, salt and pepper
Chili powder, garlic powder, salt and pepper
Cinnamon and maple syrup…toss after roasted, then put back in the oven for just a few minutes to caramelize
I made these to go on my salad last night. Put some Oregano on them. They were delicious!!
