Chocolate Covered Stuffed Dates

I was craving a peanut butter cup the other day, but we live 20 minutes from town, so I knew I wasn’t going to drive all the way there for one little peanut butter cup. I decided to get creative with what I had on hand, so I made these chocolate covered stuffed dates to scratch my Reese’s itch. These are rich, chewy, sweet and salty with the added bonus of being pretty healthy!
Ingredients:
- 20 dates, pitted
- Natural peanut butter
- 1/4 cup each bitter sweet chocolate chips and semi-sweet chocolate chips
- 1 teaspoon coconut oil
- Sea salt
Directions:
line the pitted dates on a baking sheet or large plate, spoon a generous amount of peanut butter into each date then place them in the refrigerator to firm up a bit.
Meanwhile, place the chocolates and coconut oil in a small bowl and microwave in 30 second increments, stirring between each time until completely melted and smooth. Let the chocolate cool for just a couple of minutes so its warm not hot.
Grab the dates from the refrigerator and dip them one at a time in the chocolate until coated. Use a fork to remove them and place them back on the sheet pan.
Sprinkle with sea salt before the chocolate sets up then put them back in the refrigerator for about 30 minutes until the chocolate has completely hardened. Store them in an airtight container in the refrigerator to enjoy for the week!
