Healthy Nut Butter Cookies

Happy Monday! Let’s get this week of to a sweet start with these healthy nut butter cookies! These cookies are SO good! They are perfect for dessert, an afternoon snack, a quick breakfast or even a midnight snack! Nut butter cookies are basically an any-time-of-day cookie! Not only are these cookies gluten free and packed with protein, they are sugar free too because I sweeten them with real maple syrup instead of sugar. And for an added bonus, they don’t even require a mixer! They’re soft, chewy, nutty and sweet. You can leave them as is, or top them with dark chocolate and sea salt for some extra decadence…which I highly recommend.
Makes 2 dozen
Ingredients:
- 1/2 cup natural almond butter
- 1/2 cup natural peanut butter
- 3/4 cup real maple syrup
- 1 tsp vanilla
- 1 1/2 cup almond flour
- 1 tsp baking powder
- 1/2 tsp of kosher salt
- Maldon salt and dark chocolate (optional)
Directions:
Pre-heat the oven to 350F, line two baking sheets with parchment paper.
Mix the almond butter, peanut butter, syrup and vanilla together in a bowl. In a separate bowl, mix the almond flour, baking powder and salt together, add the wet ingredients to the dry and mix until completely combined. Using a small scoop, scoop the dough onto the baking sheets (12 per sheet). Top the cookies with a sprinkle of Maldon salt and a few chocolate chips or a chocolate disc (optional) I did one sheet with chocolate and one without. Bake for 10-12 minutes or until the bottoms are slightly golden. Let them cool a bit before serving. Enjoy these healthy nut butter cookies with an iced coffee, or a cold glass of milk.
