S’Mores Fudge Pop Bites

After making these homemade fudge popsicles, I decided to make this variation because I love s’mores! I used this silicon ice cube tray to layer toasted marshmallows, buttery graham cracker crumbs and chocolaty fudge. The result, S’mores fudge pop bites…a perfect summer treat! Before we dive into the recipe for these s’mores fudge pop bites, let’s take a moment to appreciate my favorite scene from one of the best Summertime movies.

Ingredients:

Fudge Popsicle Mix

1 cup graham cracker crumbs

2 Tbsp butter, melted

2 Tbsp brown sugar

1 cup mini marshmallows

Directions:

Make a batch of this fudge popsicle mixture and set aside to cool slightly.

Pre-heat oven to 350F, Place 1/2 cup of the mini marshmallows on a parchment lined baking sheet and toast in the oven for about 2 minutes or until lightly golden. Leave the other 1/2 cup of marshmallows plain, this will create some different textures and flavors.

Mix the melted butter, graham cracker crumbs and brown sugar together until combined.

Using a silicon ice cube tray or silicon popsicle mold, pour a little bit of the fudge mixture in the bottom, then add two toasted and two regular mini marshmallows followed by a bit more fudge mixture, then a spoonful of graham cracker crumbs and top it off with more fudge mixture and more marshmallows.

Freeze for at least 4 hours or overnight, untold and enjoy the taste of summer!
