Watermelon Granita

Happy Friday! It’s going to be hot today so I am thrilled that I made this watermelon granita yesterday. If you need an easy dessert recipe for this weekend, look no further! This couldn’t be more simple to make because the freezer does most of the work. All you have to do is scrape the ice crystals as they form to create a fluffy, icy texture. Don’t hesitate to get creative with this. I used fresh watermelon juice, sugar and lime juice but you can use any blended fruit juice you can think of and mix in lemon juice, mint or basil simple syrup or maple syrup to sweeten it instead of sugar.

Ingredients:

8 cups seedless watermelon, cubed

1/4 cup sugar or sweetener of your choice*

The juice of 2 limes

Directions:

Place cubed watermelon, sugar and lime juice in a blender and blend until smooth.

Using a mesh strainer, strain the mixture into a 9×13 glass pan.

Place the pan in the freezer for 3-4 hours.

every 30 minutes, scrape the mixture with a fork breaking up any ice crystals that have formed. This will ensure that you get a fluffy, shaved ice consistency.

Serve the watermelon granita in fun bowls or fancy glasses and enjoy!

Store the granita in the freezer covered with plastic wrap.

*Other sweetener options- coconut sugar, date sugar, maple syrup or honey
