BBQ Chicken Stuffed Sweet Potatoes

I don’t know about you, but during the summer I crave BBQ. I could eat it every week which is not exactly healthy. So I decided to create a healthier version of BBQ so I can enjoy it all summer long. If you’ve followed along on Instagram you’ll remember seeing me make BBQ chicken in the crockpot. Instead of piling it up on a brioche bun slathered in pimento cheese (drool) which is delicious of course, I’m piling it up on a roasted sweet potato. These BBQ chicken stuffed sweet potatoes are so satisfying and filling yet very healthy.

Serves 4

Ingredients for the chicken:

  • 4 chicken breasts
  • The juice of 2 limes
  • 1/2 cup BBQ sauce of your choice
  • 1 tbsp honey
  • Salt and pepper to taste

Directions:

Place everything in a crockpot (I have this one) and cook on high for 2-3 hours until chicken is falling apart and ready to shred.

Using a mixer, shred the chicken to desired size. Add more BBQ sauce once shredded.

For the sweet potatoes:

  • 4 sweet potatoes
  • 1 tbsp coconut oil
  • Salt and pepper

Directions:

Pre-heat oven to 425F

Wash sweet potatoes, place them on a parchment lined baking sheet and roast for about 45 minutes or until soft in the middle when pierced with a fork.

The potatoes should burst a little and release their natural sugars which will caramelize and create a candied flavor.

Once they’re caramelized and cooked through, let them cool for a few minutes before cutting them down the center.

Add a bit of coconut oil and some salt and pepper to taste, then top with the BBQ chicken and enjoy!

This is perfect served with a nice salad or some roasted broccoli.
