Cheesy Polenta With Warm Tomatoes

If you need a quick, simple, flavorful dinner this week, look no further! This cheesy polenta with warm tomatoes is so easy and so satisfying. Butter and parmesan are melted into the polenta to create a smooth, creamy texture. Cherry tomatoes are sautéed in olive oil, salt, pepper and fresh basil. Add fresh chives to the polenta, top with the warm cherry tomatoes and enjoy!
Serves 4
Ingredients for polenta:
- 1 cup dry polenta
- 2 cups water
- 1 1/2 cups milk (plus more if polenta is too thick)
- 2-3 tbsp butter
- 1/2 cup parmesan
- 1 heaping tbsp snipped chives
Ingredients for tomatoes:
- 2 tbsp olive oil
- 2 cups cherry tomatoes
- Kosher salt and pepper to taste
- 1/4 cup fresh basil leaves, torn
Directions:
Bring water and milk to a boil, stir in polenta, reduce heat to low and cook stirring frequently for 20-30 minutes until thick. Meanwhile, heat the olive oil in a pan over medium heat, add the tomatoes, salt and pepper and sauté until tomatoes start to burst, stir in the basil and cook another minute. Add butter, parmesan, chives, salt and pepper to taste to the polenta, plus more milk if the polenta is too thick. Spoon the polenta into shallow bowls and top with the warm tomatoes, more basil and extra parmesan.
