Chicken And Wild Rice Soup

Do you want to make a really quick tasty dinner tonight? Try this chicken and wild rice soup. You simply toss everything in the crockpot and let it simmer the day away. By dinnertime tonight, you’ll have a hearty soup that the whole family will love. Add this easy beer bread on the side and you’ll be a hero!

Ingredients:

  • 1 pound chicken breasts
  • 1 small yellow onion, diced
  • 2 garlic cloves, minced
  • 3 carrots, diced
  • 3 celery stalks, diced
  • 1 cup wild rice, rinsed
  • 6 cups chicken stock
  • Salt and pepper
  • 1 1/2 tsp fresh thyme, minced
  • 2 bay leaves
  • 2 sprigs rosemary
  • 4 tbsp butter
  • 1/4 cup flour
  • 2 cups milk
  • 1/4 cup white wine
  • 2 big handfuls kale, sliced in thin strips

Directions:

Place the chicken, onion, garlic, carrots, celery, rice, chicken stock, salt and pepper to taste, thyme, bay leaves and rosemary (tied in cheese cloth to avoid having to search for them in the soup later) to the crockpot and cook on medium for 5-6 hours or until the chicken is falling apart and the rice is cooked. Remove chicken and shred into pieces then return to crockpot.

Right before serving, melt the butter in a medium saucepan, add the flour and cook for 1 minute, whisk in the milk and cook stirring frequently until slightly thickened, stir in wine then add mixture to the crockpot and stir to combine.

Add kale and cook until wilted, check for seasoning and add more salt and pepper if needed. For a thinner soup, add more stock or milk and enjoy!
