Chicken With Mushrooms

Do you want a weeknight meal that you can make in under 30 minutes using just one pan? Then this chicken with mushrooms is for you! Chicken and cremini mushrooms are browned with butter and shallots then simmered in white wine, dijon and cream to create a delicious, flavorful dish that tastes like it’s been cooking all day.
Serves 2
Ingredients:
- 2 chicken breasts
- Salt and pepper
- 3 tbsp butter
- 2 shallots, sliced thin
- 1/4 pound cremini mushrooms, sliced
- 1 tbsp fresh thyme, chopped
- 1/2 cup white wine
- 1 tbsp Dijon Mustard
- 1/2 cup heavy cream
- 2 tbsp parsley, chopped
Directions:
Dry the chicken breasts with a paper towel then season with salt and pepper, place in a pan coated with olive oil over medium-high heat.
Cook chicken until browed, about 5 minutes, then flip and cook another 5 minutes. remove chicken, put it on a plate and cover with foil.
Add butter to the pan, melt then add shallots and cook for 1 minute.
Add the mushrooms and thyme, cook 3 minutes.
Whisk white wine and dijon together and add it to the pan, stir scraping up any brown bits from the bottom. Simmer for 2 minutes, stir in cream, add chicken back in and cook until internal temperature reads 165F.
Stir in parsley and serve immediately.
This chicken with mushrooms pairs perfectly with buttered egg noodles and roasted asparagus.
