Date Night Caprese Omelet For Two

I used up the last of the tomatoes and basil from our little garden to make this simple date night caprese omelet for two. Fresh mozzarella and homemade pesto make this omelet extra cheesy and full of flavor. We had this for dinner, not breakfast…what a couple of dangerous rebels! We made this the ultimate relaxing date night by adding some toasty bread, a bottle of rose, some candles and some great music. Then we watched “The Hundred-Foot Journey” and ate really good chocolate for dessert.
Ingredients:
- 1 tbsp unsalted butter
- 1 cup cherry tomatoes
- 5 eggs
- 3 tbsp cream
- Salt and pepper to taste
- 3 tbsp pesto
- 4 oz fresh mozzarella
Directions:
Preheat oven to 350F
Melt the butter in an 8 inch ovenproof sauté pan over medium-low heat, add the tomatoes, a pinch of salt and pepper and sauté until the tomatoes just start to burst, about 3-5 minutes. Meanwhile, whisk the eggs, cream and a pinch of salt and pepper together until incorporated and frothy. Pour the eggs over the tomatoes, spoon the pesto over the eggs and top with the mozzarella. Place the pan in the oven and bake for 15-20 minutes or until eggs are puffed and just set. Serve hot from the oven and enjoy!
