Easy Healthy Broccoli Soup

This might be the easiest soup you’ll ever make. When I need something healthy that has great flavor, I make this easy healthy broccoli soup from this cookbook. Because this soup gets blended, everything can just be roughly chopped which is a bonus! The arugula gives it a peppery bite and the fresh lemon juice adds a nice brightness. You can add any kind of cheese you want or leave it as is. I like using this merlot bellavitano, aged white cheddar or stilton, depending on my cheese mood…yes, that’s a thing.

Some days are stilton,
Some days are not,
Some cheese is softer,
Some cheese is blocked.
Anyway, I can’t recommend this soup enough, it’s so simple and satisfying.
Serves 4
Ingredients:
- 2 tablespoons olive oil
- 1 yellow onion, roughly chopped
- 2 cloves garlic, roughly chopped
- 2 large stalks of broccoli, chopped into small florets
- 4 cups vegetable stock
- 1/2 teaspoon kosher salt
- 1/4 teaspoon fresh black pepper
- 1 heaping cup arugula
- The juice of 1 lemon
- 2-4 oz cheese of your choice, plus more for garnish
Directions:
Heat the olive oil in a large pot over medium heat, add the onion, garlic and broccoli and cook for 5 minutes.
Add the stock, salt and pepper, bring to a boil, reduce to a simmer, cover and cook for 8-10 minutes until the broccoli is tender.
Place the soup in a blender with the arugula and lemon juice and blend util smooth.
Add the blended soup back into the pot, add the cheese if using and stir until melted. Check for seasoning and add more salt and pepper if needed.
Serve the soup topped with a little, or a lot of extra cheese and enjoy!
