Grilled Cheese Sandwiches
You can’t exactly have tomato basil soup without crispy, gooey grilled cheese sandwiches. You can get fancy with this by adding spreads, bacon or fruit but I like to keep this tomato soup sidekick pretty classic.
- 4 slices country white bread
- Butter, at room temp
- Maldon salt
- 1 cup grated white cheddar
- 1 cup grated gruyere cheese
Mix the two cheeses together.
Spread one side of each slice of bread with butter, sprinkle with salt, heat a pan over medium.
Place bread butter side down in the pan and top with 1 cup of the cheese blend and cover with the other slice of bread, butter side up.
Cover and cook for two minutes or until golden, flip and cook another minute uncovered or until the cheese is completely melted and the bread is golden. Cool slightly, cut and enjoy!
