Sausage And White Bean Skillet

Hello again! The last time I posted a recipe was October 2022! There are lots of reasons that it’s been so long…life got busy, I was in a big cooking rut, I was putting too much pressure on taking perfect photos (something I am definitely not good at), I found myself sharing recipes that I thought people wanted to see instead of what I wanted to make and eat, and all of a sudden I realized that I wasn’t having fun anymore. So now here I am, months later, sharing what we ate for dinner tonight, bad photo and all.
Summer is our busiest season as all of our attention goes into running our guesthouses here on the ranch. On days when we are cleaning and getting ready for our next guests, dinner takes a back seat. I’m trying to be better about cooking healthy, quick meals which is why I want to share this sausage and white bean skillet. If you’re having a busy summer evening, this is going to be a lifesaver.
Serves 2-3
Ingredients:
- 1-15 oz can diced tomatoes
- 1-15 oz can white beans, drained and rinsed
- 4 chicken sausages, I used these
- Kosher salt and pepper to taste
- 1/4 cup feta, crumbled
Directions:
Preheat oven to 375 degrees
place the tomatoes and white beans in an ovenproof skillet and season with salt and pepper to taste and stir to combine.
Nestle the chicken sausages into the tomato and bean mixture and bake for 30-40 minutes or until bubbling.
Add the feta and place back in the oven for about 5 minutes and that’s it! I told you, easy!!
Serve with a side salad and enjoy!
You can double this recipe, you’ll just have to let it cook longer. Keep an eye on it, be confident and trust yourself…you’ll know when it’s done, just watch for bubbles!
