Tomato Basil Soup

This classic comforting tomato basil soup is perfect on a chilly evening paired with a toasty grilled cheese and a simple salad. Talk about a nostalgic meal!
Ingredients:
- 2 tbsp butter
- 1 tbsp olive oil
- 1 medium yellow onion, diced
- 3 carrots, sliced
- 2 cloves garlic. minced
- 1 tbsp tomato paste
- 1 28 oz can whole tomatoes
- 1 28 oz can crushed tomatoes
- 1/2 tbsp kosher salt
- 1/2 tsp pepper
- 1/2 tsp dried basil
- a few sprigs fresh thyme
- a handful of fresh basil
- 2 tsp honey
- 1 cup chicken stock
- 1/2 cup heavy cream
Directions:
In a large pot, heat butter and olive oil over medium low heat, add onions and carrots and cook for 10 minutes until softened, add garlic cook 2 minutes, add tomato paste and stir until the everything is coated.
Add both cans of tomatoes, salt, pepper, basil, thyme, honey and chicken stock, bring to a boil, reduce to a simmer and cook for 30 minutes.
In two batches, place soup in the blender and blend until smooth.
Return soup to the pot, add cream, check for seasoning and add more salt and pepper if needed and warm over medium low heat before serving.
