Honey Mustard Almond Crusted Salmon

With just a handful of ingredients, you can have a simple, satisfying and healthy dinner. That’s why I love this honey mustard almond crusted salmon. It’s perfect for a weeknight dinner because it takes just 20 minutes to make. I had some leftover cooked quinoa in the refrigerator so I tossed it together with arugula, feta and my basic vinaigrette to serve along side it.
Serves 2
Ingredients:
- 2 salmon filets
- Kosher salt
- Fresh ground pepper
- Olive oil
- 3 tbsp Dijon Mustard
- 2 tbsp honey
- 1/4 cup sliced almonds, crushed and lightly toasted*
- A squeeze of lemon for serving
Directions:
Preheat oven to 375F, season salmon on both sides with salt and pepper and place in a small glass baking dish drizzled with olive oil.
Whisk the Dijon and honey together in a small bowl, stir in toasted almonds, spoon mixture over salmon and bake for 12-15 minutes or until salmon is cooked through. Serve immediately with a squeeze of lemon and the quinoa arugula salad.
*For the almonds: Place almonds in a bag, seal it and use a rolling pin to crush them. Then toast them in a small pan over low heat for 3-5 minutes until just golden and toasty.
