Simple Kale Salad

When I say simple kale salad, I mean it’s almost embarrassing just how simple it is. I make this for lunch a couple times a week, but it works great as a side dish too. There are just a handful of ingredients and I don’t really have specific measurements because it’s all about your preference.
Ingredients:
- Kale, washed and chopped
- A handful of seedless grapes, sliced in half
- A handful of any nuts of your choosing, roughly chopped, I like a combination of almonds, cashews and pistachios.
- A sprinkling of feta cheese
- A couple of pitted dates, chopped
For the dressing:
Equal parts apple cider vinegar, maple syrup and olive oil and salt and pepper to taste
Directions:
Place the kale in a medium bowl, drizzle with a little olive oil, sprinkle on a pinch of kosher salt and massage for about 1 minute until the kale has softened.
To make the dressing, whisk the cider vinegar, syrup and olive oil together with kosher salt and fresh black pepper to taste.
Add the rest of the ingredients to the kale, toss together with the dressing and enjoy!
