Mango Turmeric Popsicles

Do you ever use a recipe that calls for just half a can of something? I hate when that happens, what are you supposed to do with the leftovers? This happened to me the other night, I had leftover coconut milk that I didn’t want to go to waste. I had mango in the freezer so I decided to make mango turmeric popsicles. It turned out to be a great decision! These popsicles are healthy and delicious with just the right amount of sweetness.

Ingredients:
- 3/4 cup full fat coconut milk
- 1/3 cup coconut water, plus more if mixture is too thick
- 1/2 teaspoon ground turmeric
- 1 teaspoon vanilla extract
- 2 tablespoons honey
- 1 1/2 cups frozen mango
Directions:
Place everything in a blender and blend until smooth.
Pour the mango mixture into popsicle molds and freeze until solid.
Remove from popsicle molds and enjoy!
