Mixed Berry Kale Salad

This mixed berry kale salad is healthy flavorful and filling. It’s perfect for lunch or as a side with dinner. I’m not always good at prepping lunch, it’s something I’m working on. This salad makes prepping easy and allows me to make sure I get healthy lunches during the week. I prep all the ingredients ahead of time and then combined them right before I’m ready for lunch. I cut up strawberries and store them in a container, wash and cut up kale, drain and rinse a can of garbanzo beans and store them in the fridge. And since I always keep this basic vinaigrette on hand, all I have to do is toss it all together and enjoy!
Ingredients:
- 1 bunch of kale, chopped
- 1/2 cup blueberries
- 1 cup garbanzo beans
- 1 cup strawberries, sliced
- 1/2 cup feta, crumbled
- Basic vinaigrette
Directions:
Place the chopped kale in a salad bowl and massage it with a drizzle of olive oil and a pinch of kosher salt, top it with the remaining ingredients. Use the basic vinaigrette as is or add a couple of teaspoons of blueberry jam…you won’t be sorry!
