Shaved Asparagus Salad

If you’re looking for a simple, light Spring side dish, I’ve got you covered! This shaved asparagus salad is bright and crisp with a tart, lemon dressing and big chunks of salty feta…yum!

Ingredients:

  • 1 bunch asparagus
  • 2 cups sugar snap peas, sliced
  • 1/4 cup toasted pine nuts
  • 1/4 cup feta, crumbled
  • Zest and juice of 1 lemon
  • 2 tablespoons olive oil
  • 1/2 cup fresh mint, torn
  • 1 green onion, minced
  • Kosher salt and pepper to taste

Directions:

Wash and trim the ends of the asparagus, then peel off the outer tough layer and discard. Using a vegetable peeler, peel the asparagus into ribbons and place in a large salad bowl.

Add the remaining ingredients and toss together until coated. Set aside for 5 minutes to allow the flavors to come together and the lemon juice to slightly wilt the asparagus, taste for seasoning, add more salt, pepper and lemon juice if needed and enjoy!

We had our shaved asparagus salad with roasted salmon, but it would be great as a side with chicken or steak too.
