Spinach and Garlic White Beans
Spinach and garlic white beans could not be more simple. The Perfect side dish any night of the week, it’s healthy and full of flavor. This would even be a great addition to your Thanksgiving table.
- 3 tbsp olive oil
- 2 cloves garlic, minced
- 2 cans white beans, 1 whole can and 1 drained and rinsed
- 5 oz fresh spinach
- Red pepper flakes to taste
- Salt to taste
In a medium pot, heat olive oil over medium heat, add garlic and cook about 1 minute. Drain and rinse only 1 of the cans of white beans and add to garlic, add the other can of white beans, liquid and all and cook for 5 minutes until some of the liquid is reduced. Add the spinach and red pepper flakes and cook until just wilted, about 2 minutes. Taste and add salt if needed. Keep in mind, the white bean liquid is salted so you may not need any extra salt. Serve your spinach and garlic white beans with your favorite main dish and enjoy!
