Kale Chips

Happy Monday! Let’s start the week off with a simple 3 ingredient recipe… kale chips! They are crispy, salty, tasty and healthy. They are perfect for an afternoon snack or used to top pastas, soups or salads. A healthy alternative to potato chips, these kale chips are the perfect way to get your greens without knowing they’re greens. Once they crisp upon the oven coated in olive oil and French salt, you’ll forget they’re healthy. The kale will shrink down a bit in the oven, so make a double or even triple batch if you want it to last for a couple days.
Ingredients:
- 1 bunch kale
- Olive oil
- Fleur de sel or kosher salt
Directions:
Preheat oven to 350F, wash kale and dry completely. Remove the ribs and roughly cut kale into pieces, spread kale out on a sheet pan, do not crowd the kale or it will steam instead of crisp. Drizzle with olive oil and sprinkle with salt to taste, toss to evenly coat. Roast for 15 minutes or until crisp. Add another little pinch of salt and enjoy right away or cool the chips and pop them in a bowl. I like to leave the bowl out on the counter so they are easy to grab when I need a little snack.
If you double this batch, you’ll want to divide the kale onto 2 sheet pans so they crisp nicely, you don’t want them to get soggy from steaming.
