Scott’s No-Fuss Nachos

When Scott was growing up, he and his family would go skiing with their friends and the adults would apres ski with gin martinis and nachos. They would make trays and trays of nachos because the kids would gobble them up. Scott introduced me to these simple nachos years ago and I can’t get enough. Scott’s no-fuss nachos aren’t just for apres ski, they are perfect while watching football, after working outside on a cold day or on the side of a big bowl of chili. The best part about these nachos…they are made in a single layer so there are no soggy chips!
Ingredients:
- Round tortilla chips
- Extra sharp cheddar cheese
- Jalapeños
Directions:
Preheat oven to 350F
Place chips in a single layer on two baking sheets.
Slice the cheddar thin and cut into squares to fit on the chips, top each chip with the cheese.
Leave one tray of nachos plain cheese, top the other tray with jalapeños.
Bake for 5 minutes, rotate the trays and bake a bit longer until the cheese is melted.
Serve half plain and half jalapeños and enjoy.
I could eat the whole tray!!!! Especially with a Gin Martini!!
