Spiced Pear Cocktail

Good morning. Today I am feeling very thankful for all of the people who are working hard to count our ballots, it is not going unnoticed. To toast the people that make our democracy happen, I decided to make a spiced pear cocktail. Be sure you are using a very ripe, soft pear to get the most flavor.
Now onto this spiced pear cocktail. Below are the measurements for 2 drinks, please note that these measurements can be adjusted to your personal taste. If you want a sweeter drink, add more maple syrup, if you like a tart drink, add more lemon juice. If you are making more than 2 drinks, make a larger batch of the spiced pear nectar recipe.
Ingredients for 2:
- 4 oz gin
- 3 oz spiced pear nectar (recipe follows) or more to taste
- Juice of 1 lemon
- A handful of ice
Pear puree:
- 1 ripe pear, peeled, cored and diced
- Juice of 1 lemon
- 2 tbsp water
- 1 tbsp maple syrup (plus more if you want a sweeter drink)
- 1/4 tsp cardamom (plus more to taste)
- 1/4 tsp cinnamon (plus more to taste)
- 1/8 tsp ground cloves
- 1/4 tsp vanilla
Directions:
Place everything except the vanilla in a small pot and bring to a boil then reduce to a simmer and cook for 5 minutes or until pears are soft and falling apart. Remove from heat, add vanilla and place mixture in the blender and blend until smooth. (add a little more water if needed) Pour into a jar a refrigerate until cooled completely.
Place gin, spiced pear nectar, lemon juice and ice in a shaker and shake until nice and cold. Pour in chilled coups and enjoy!
