Tom Collins

In the mood for a classic cocktail? Why not try a Tom Collins?! This refreshing, tart cocktail is the perfect way to start your weekend on a high note!
Ingredients for 2:
- 4 ounces gin
- 2 ounces freshly squeezed lemon juice
- 1 ounce simple syrup, plus more if you want a sweeter drink
- Ice
- Club soda
- 2 lemon rounds
- 2 cherries I love these ones
Directions:
Place a handful of ice in a cocktail shaker, add the gin, lemon juice and simple syrup and shake until very cold. Fill two Collins glasses (these are mine) with ice, strain the contents of the shaker into each glass, top with club soda, garnish with a lemon round and cherry and enjoy!

To make the simple syrup:
Combine 1/2 cup of sugar and 1/2 cup of water in a small saucepan and heat until the sugar has dissolved. Let the simple syrup cool completely before using. Store the remaining syrup in a container in the refrigerator so you’ll have it on hand for happy hour.
