Watermelon Arugula Salad

When it’s hot out, nothing sounds better than ice cold watermelon. For a delicious lunch or to pair with any summer main dish, try this watermelon arugula salad. It’s sweet, spicy, tangy and salty…all the best flavors in one refreshing salad.
Serves 4
Ingredients:
- Zest of 1 lemon
- 3 tablespoons lemon juice
- 2 teaspoons honey
- 1/2 teaspoon kosher salt
- 1/4 teaspoon pepper
- 1/4 cup olive oil
- 3 cups cubed watermelon
- 4 oz feta, crumbled
- 5 oz arugula
- 1/4 cup roughly chopped mint leaves
Directions:
For the vinaigrette, place the lemon zest, lemon juice, honey, salt and pepper in a small bowl and whisk to combine. Then while whisking, drizzle in the olive oil until emulsified.
Place the watermelon, feta, arugula and mint together in a large bowl, toss with the lemon honey vinaigrette and enjoy! This salad is so easy, you’ll make it all Summer long.
