A Simple Salad

Am I the only one who gets burned out on prepping lunches? Our days are busy and I find myself grabbing whatever is quick and easy. The other day, I was looking through the pantry in search of something more exciting than a sandwich. I grabbed a can of white beans, a jar of olives and some sun-dried tomatoes and tossed it together with some spinach and peppers to create a simple salad. It was really easy to make and was definitely more exciting than my usual lunch!
Serves 1
Ingredients:
- A big handful of spinach
- 3 mini peppers, sliced
- 1/4 of a cucumber, sliced
- 1/4 cup white beans, drained and rinsed
- A spoonful of sun-dried tomatoes
- Green olives (as many as you want)
- Goat cheese, to taste
- Salad dressing of your choice

Ready for the easiest prep ever? Just toss everything together and enjoy!
Store the extra white beans in the refrigerator so you can make this salad again. Or for even easier prep, cut extra peppers and cucumbers, add a couple of spoonfuls of sun-dried tomatoes, olives and goat cheese to the container of white beans and keep it in the refrigerator to have on hand for the week. When it’s time for lunch, just add some spinach and toss it all in the dressing.
Helpful Hint…
The oil from the jar of sun-dried tomatoes is packed with flavor, you can use it as salad dressing just add 1 tbsp of balsamic or red wine vinegar to 1/4 cup of sun-dried tomato oil.
