Peach And Tomato Summer Salad

This might be my most favorite salad to make during the Summer when peaches, corn and tomatoes are at they’re peak. It’s sweet and summery and has homemade croutons and salty feta. It’s the perfect side dish for a Summer dinner. This peach and tomato Summer salad is a must make. You can make the dressing and the croutons ahead of time which makes this a quick recipe. We had ours with grilled Italian chicken sausage which was a perfect combination.

Serves 2

Ingredients:

  • 2 ears of corn, cut off the cob
  • 4 small peaches, diced
  • 1 cup cherry tomatoes, sliced in half
  • 2 oz feta, cut into cubes
  • 1 batch of vinaigrette with 1 minced shallot added to it. (You may not need the entire batch so just save the rest in the fridge.)
  • Homemade croutons
  • 2 big handfuls Spinach or mixed greens

Directions:

Toss the corn, peaches and tomatoes together in the shallot vinaigrette, add as many croutons as you want plus the greens and toss again. divide between two bowls, top with feta and enjoy!

We’re having a date night tonight because, why not?

All of our days blend together and it feels a bit like groundhog day so I decided to make dinner a bit more special tonight to change it up a bit. We’re having gin gimlets and some olives and roasted almonds to start the evening. Then we’ll enjoy our peach and tomato Summer salad and some grilled Italian sausage. I’ve set our coffee table with cloth napkins, candles and flowers to make it special. We’re going to watch a movie and just enjoy this Tuesday night. I think it’s important to keep things fresh and exciting during these strange times. Having a date night or a fun family dinner is so simple and worth the couple of extra steps it takes to create a special night.
