Sugar Snap Pea and Corn Salad

There is something about using simple ingredients that when married together go from fine to fabulous. This sugar snap pea and corn salad is just that. Simple ingredients that are a match made in heaven. Serve this up in a small bowl for a snack or turn it into a nice lunch by adding spinach. The salty feta cheese is perfect with the sweetness of the sugar snap peas and the roasted flavor from the corn.
Ingredients:
- 2 ears of corn
- 2 handfuls sugar snap peas, chopped
- 1/2 cup feta, crumbled
- 1 small garlic clove, minced
- 1 tbsp white wine vinegar
- 1 tbsp freshly squeezed orange juice
- 2 tbsp olive oil
- Salt and Pepper
Directions:
Cut the corn off the cob, heat a pan over medium, lightly coat with olive oil, add corn and cook stirring frequently until golden. It will pop a bit as it cooks. Meanwhile, whisk the garlic, vinegar, orange juice, olive oil, salt and pepper together. Mix the snap peas and corn together in a bowl and toss with the orange vinaigrette. Serve it up in a bowl topped with crumbled feta and a pinch of Maldon salt. So simple but so good!
